- Provision of appropriate statistical analysis of the survey data to describe the prevalence and concentration of Campylobacter, Salmonella and hygiene indictor organisms on poultry meat for incorporation into the survey report.
- Critical review of data generated to facilitate comparison of survey results betwen states.
Outcomes
- Quantification of hazard levels at various stages of the supply chain prior to the implementation of the Primary Production and Processing Standard (PPPS) for Poultry Meat.
- Assessment of the effectiveness of the PPPS for Poultry Meat.

- Hygiene baseline survey of chicken meat boning operations (abattoir-integrated and independent) to establish adequacy of measures and contribution to retail pathogen levels
- Undertake a baseline survey of retail chicken meat including serotyping and AMR (analytical measurement range) testing of Salmonella and Campylobacter isolates
- Obtain baseline data at other stages of the poultry supply chain.
Outcomes
- Benchmark processing hygiene performance against which an audit of procedures to identify areas for improvement can be justified – to inform program priorities.
