Ripening

Apricots should not need ripening. They must be harvested as ripe as practical for best quality and drying ratio. If green fruit has been harvested, there is benefit in allowing the fruit to stand in ambient conditions until it colours and begins to soften. This will not improve the drying ratio but will decrease fruit shrinkage resulting in larger dried size, improved shape and enhanced dried colour. It will not achieve the size and colour of fruit harvested at full maturity.
